Tailgate Meatball Extravaganza
This is a great recipe sent in from one of users, who would like to stay anonymous. We tried this out a few days ago, and it was outstanding. However, this is the type of recipe you should make the night before the tailgate, and reheat on the grill before serving.
INGREDIENTS
1 lb. Pork Sausage (Spicy or Mild)
1 lb. Lean Ground Beef
½ Cup Seasoned Breadcrumbs
2 Eggs, lightly beaten
¼ Cup Milk
½ Cup Diced Onion
½ Teaspoon of Salt
½ Teaspoon of Pepper
½ Cup Apple Jelly
¼ Cup Spicy Brown Mustard
¼ Cup Whiskey
1 Teaspoon of Worcestershire
1 Teaspoon of Tabasco
DIRECTIONS
Combine sausage, beef, breadcrumbs, eggs, milk, onions, salt, and pepper. Shape into 1½ inch balls. Place on a lightly greased jellyroll pan or cookie sheet. Bake at 375° for 30 minutes, turning after 15 minutes.
To Make the Sauce:
Combine apple jelly, spicy brown mustard, whiskey, Worcestershire, and Tabasco in a large skillet or wok over medium heat. Cook for one minute, then add meatballs for 5 more minutes, stirring to make sure they all get coated.
